ICE CREAM “FREEZING” CLASS
Remember when you were a kid and your summertime job was hand cranking ice cream on visits to your grandparents’ house? That classic wooden bucket filled with rock salt and ice. And in the center was a stainless steel container full of your grandmother’s recipe for cool, summer deliciousness. After what seemed like an eternity, she’d scoop out the fruits of your labor – pure satisfaction.
Now you can learn the same techniques of making pure, simple ice creams for your friends & family. Jim Cushing, owner of Charlotte & Olivia’s Sublime Ice Creams, will spend time in the kitchen to share his passion for artisan ice cream. This class includes a discussion about the differences between commercially produced ice creams and homemade ice creams, the freezing process, flavor profiles and ingredient ratios.
Following the discussion, will be a hands-on “freezing” class. Aspiring ice cream chefs will learn how to make a batch of ice cream “dairy mix”, the base for all ice cream recipes. Then the group will select different signature mixes from Charlotte & Olivia’s Sublime Ice Creams. The mixes will be used in conjunction with other ingredients that class-members have prepped to mix-up fresh batches of homemade ice cream.
As a bonus, while the ice cream is freezing, participants will have the opportunity to enjoy a mini tasting of some of Jim’s favorite flavors. Participants will also have the opportunity to purchase any pints of ice cream at a 15% discount – so be sure to bring your cooler!
