Italian Thanksgiving

Thanksgiving may be an American holiday, but we will be showing how to celebrate it, Italian style! You will start the class by learning how to compose a delicious pumpkin ravioli filling, as well as how to make and cut the pasta by hand.

What is Thanksgiving without a turkey? Instead of traditional American style stuffing, we will be filling the bird with prosciutto, bread crumbs, and herbs, in addition to lining it with pancetta and garlic. A new way to prepare turkey and surprise your whole family with it over the holiday!

The meal will be finished with a delicious zucchini olive oil cake will a lemon crunch glaze, for a different take on a squash like dessert.

Crespelle, Italian Crêpes

In this class, you will learn how to make the perfect crespelle.  Be shown how to prepare a flawless batter, and how to utilize it in both a sweet and savory way.  We will be offering a prosciutto and fontina combination, as well as spinach and taleggio. With these, you will also be taught how to make a basic béchamel sauce.

During this class you will learn the process of how to make limoncello. The recipes is from a grup of  nuns in the mountains of Sicily. It takes over two months for the limoncello to be ready. Once you master this recipe start your process so that you can have it ready for the Holidays. Limoncello makes a wonderful gift for friends. Also in this class you will learn how to make a lovely lemon-olive oil tart with a crust that you will use over and over again. All participants will take home a bottle of limoncello.

ICE CREAM “FREEZING” CLASS

Remember when you were a kid and your summertime job was hand cranking ice cream on visits to your grandparents’ house?  That classic wooden bucket filled with rock salt and ice.  And in the center was a stainless steel container full of your grandmother’s recipe for cool, summer deliciousness.  After what seemed like an eternity, she’d scoop out the fruits of your labor – pure satisfaction.

Now you can learn the same techniques of making pure, simple ice creams for your friends & family.  Jim Cushing, owner of Charlotte & Olivia’s Sublime Ice Creams, will spend time in the kitchen to share his passion for artisan ice cream. This class includes a discussion about the differences between commercially produced ice creams and homemade ice creams, the freezing process, flavor profiles and ingredient ratios.

Following the discussion, will be a hands-on “freezing” class.  Aspiring ice cream chefs will learn how to make a batch of ice cream “dairy mix”, the base for all ice cream recipes.  Then the group will select different signature mixes from Charlotte & Olivia’s Sublime Ice Creams.  The mixes will be used in conjunction with other ingredients that class-members have prepped to mix-up fresh batches of homemade ice cream.


As a bonus, while the ice cream is freezing, participants will have the opportunity to enjoy a mini tasting of some of Jim’s favorite flavors.  Participants will also have the opportunity to purchase any pints of ice cream at a 15% discount – so be sure to bring your cooler!

I was born in Verona on January 12th, 1972 in a family of wine makers. Raised in the land of Amarone I took my first wine class at the age of nineteen while I was studying Political Science at the college.
It did not take me long to realize that my way was to continue in the family business of selling wine, so I switched to wine studies and I attended the master at the Italian Association of the Guild of Sommeliers. Now I am a professional Wine Taster, a Sommelier, a member of The Society of Wine Educators and not a politician.
I moved to United States in 1997 and I lived in New York to market and organize the distribution of Conexport, a private consortium that represent some of the best small producers from different wine regions of Italy.
Now I am back home in Verona, the city of "Romeo and Juliet" to spoil my vineyards and olive trees with my love and passion!!!

Join us for a tasting of selected wines from Robert Biale and dinner to accompany.
Dinner menu: orecchiette with broccoli rabe and sausage, chicken wrapped in pastry with arugula salad.

Born and raised in Napa, Robert (Bob) Biale is the son and grandson of Napa Valley grape growers. Working the farm was an integral part of growing up, but after high school he left the ranch to explore other horizons. While studying engineering at San Diego State Bob served in the Navy Reserves as a Search & Rescue Air Crewman. Before graduating he served as a lay missionary for the Catholic Church in Papua New Guinea for three years. Upon returning he finished his bachelor’s degree in Religious Studies/Social Justice at Dominican College of San Rafael and married his wife Wendy, a fellow Dominican Penguin. However, it wasn’t long before the family vineyards beckoned him to return. In addition, a temporary harvest job at Beringer in 1989 turned into a 10-year post in the cellar.

Meat Matters

In a food climate where the prevailing opinion is that we should be eating less meat, shouldn't all of our meals in which we "indulge" be the best that they can possibly be?

In this class, learn how to prep, cut, tie and prepare cuts of meat. There will be a short demonstration on sharpening knives.

We will learn how to break down a whole beef tenderloin for steak and roast preparations. Everyone in the class will make a compound butter to take home. We will also be preparing a crispy sweet potato dish along with a rack of lamb accompanied by chimichurri sauce.
